TIPSY TUESDAY

MORNING EVERYONE
Hoping everyone had a nice Valentines yesterday.. My husband came home with lovely flowers and I had cooked a nice dinner and a bottle of red wine , so my evening was perfect....But today like usual it is work and a quick trip to town to do errands and maybe a special coffee... I'll see.


SAUSAGE
PENNE



Ingredients
12 ounce(s) whole wheat penne pasta
1 large bunch broccoli, cut into florets
12 ounce(s) hot Italian turkey sausage ( Can be mild)
1 pint(s) grape tomatoes, each cut in half (those are the little tomatoes)
1/2 cup(s) (loosely packed) fresh basil leaves, chopped
1/4 cup(s) freshly grated Romano cheese (or Parmasen)
Directions
Heat large saucepot of salted water to boiling on high. Add pasta and cook for 8 minutes, adding broccoli when 3 minutes of cooking time remain. Reserve 1/2 cup cooking water; drain pasta and broccoli.
Meanwhile, thinly slice sausage on the diagonal. In 12-inch nonstick skillet, cook sausage on medium 7 to 8 minutes or until it begins to brown, stirring occasionally. Add tomatoes and cook 5 minutes longer, stirring.
Stir pasta, broccoli, and 1/4 cup pasta cooking water into sausage mixture in skillet; heat through, adding additional cooking water if needed. Remove from heat; stir in basil and cheese.

MENU MONDAY

HAPPY VALENTINES EVERYONE
Not sure what everyone is up to today for Valentines , but whatever you chose is great, just make sure you tell your loved ones how extra special they are today as well as very special everyday.....I put a card in Grumpy's shoes when he left for work this morning and going to cook a nice roast beef dinner for supper .... Other then that it is laundry day, work day and maybe even do some packing of my suitcase for our holiday in a couple of weeks.

MONDAY Tequila Lime Chicken
TUESDAY Sausage Penne

TEQUILA
LIME
CHICKEN

Ingredients
1/2 cup gold tequila
1 cup freshly squeezed lime juice (5 to 6 limes)
1/2 cup freshly squeezed orange juice (2 oranges)
1 tablespoon chili powder
1 tablespoon minced fresh jalapeno pepper (1 pepper seeded)
1 tablespoon minced fresh garlic (3 cloves)
1 teaspoons salt
1 teaspoon freshly ground black pepper
3 whole (6 split) boneless chicken breasts, skin-on

Directions
Combine the tequila, lime juice, orange juice, chili powder, jalapeno pepper, garlic, salt, and pepper in a large bowl. Add the chicken breasts. Refrigerate overnight.
Heat a grill with coals and brush the rack with oil to prevent the chicken from sticking. Remove the chicken breasts from the marinade, sprinkle well with salt and pepper, and grill them skin-side down for about 5 minutes, until nicely browned. Turn the chicken and cook for another 10 minutes, until just cooked through. Remove from the grill to a plate. Cover tightly and allow to rest for 5 minutes. Serve hot or at room temperature.
Now if you do not use your barbacue just use your frypan and brown the chicken like you would normally do on the skin side and then if your frypan is oven proof flip the chicken over and put in a 350 oven for about 20 minutes to finish cooking.. You can also do this chicken just on the stove top as well .. Serve with a salad or rice..

Well the shopping is done now it is time for dessert.. Lets see what should I post ,how about something for Valentines day..I got it

Cinnamon Rolls



Dough Ingredients:(or use a loaf of frozen bread dough, let is rise, and join us at assembly directions)
Dry ingredients
4-5 cups unsifted unbleached floured
¼ c sugar
1 Tbs salt
2 packages of active dry yeast
In sauce pan heat up (until just warm, not boiling):
2 ¼ c. milk
¼ c. cooking oil
Dough Directions:
Mix dry ingredients together in a large mixing bowl. Add 1 egg to flour mixture along with warmed liquid from sauce pan.Beat it for 30 sec. on low speed, followed by 3 minutes on medium speed.
By hand, gradually stir in 4-5 cups of flour to make a soft dough.
Kneed it on a floured surface until smooth and elastic, about 1 minute.After kneeding let it rise covered in a warm place until doubled (45-60 minutes).

Assembly Directions:Punch down dough. Separate dough into two equal portions. Roll out to form two large squares (about 9 x 11 inches). Spread ¼ c. melted butter on top of dough. Sprinkle cinnamon and sugar to heart’s desire (be generous with cinnamon and sugar). I like to mix the two together and then sprinkle on the dough.

Starting at each long end, roll the dough tightly in a roll toward the center and then stop at the center.. roll the opposite end toward the center and then pinch them together.
Slice rolls with dental floss about 1 ½ inches thick(that belongs in Tipsy Tuesday). Pinch bottom to form heart shape and indent the top for the heart. Place on greased cookie sheets. Cover and let rise for another 45-60 minutes.


Bake for 13-18 minutes at 350 degrees. Frost with your favorite icing tinted with just a drop of red food coloring. You can use buttercream icing, (click on to get recipe) but cream cheese is good too...

Now your craft for today: It is a little different. I have been making my sock monkeys for my Pay it Forward and I do not use any buttons for faces just incase the people I give them too want them for kids so what I have been doing is embroidering their faces and I came across this image and I thought this is great to keep on hand. I know that some of you do do painting for crafts so I thought I would forward it on to you as well..
Well my blogging for today is done.. It has taken awhile cause when I went to post it I accidentally deleted it and had to start all over.. But that is okay cause the sun has come out the roads are getting dry and we are going for a ride in the hotrod.. Yippee !!! FASTFOOD FRIDAY

AFTERNOON EVERYONE
Well not much happened today... Did a delivery then went to our Liquidation World and bought some great small frames for pictures.. I love to have pictures of my family and friends around my home..Not that I ever have any extra space for them I like to rearrange the photos that I have and put them in different frames every once in awhile and it makes me feel that I have redecorated and it is on a budget... Our new Liquidation World is in the old Canadian Tire up here and there is so much more room and everything is arranged so nice on the shelves not like the old one where everything was in boxes all over the place...


HOMEMADE
PIZZA
PINWHEELS

Ingredients:
1 can (235 g) Pillsbury* Crescents
2 tbsp (25 mL) grated Parmesan cheese
1/3 cup (75 mL) finely chopped pepperoni
1/3 cup (75 mL) finely chopped green pepper
1/2 cup (125 mL) shredded Italian cheese blend
1/2 cup (125 mL) pizza sauce.
Method:
STEP 1 - Heat oven to 350°F. Unroll dough and separate into 4 rectangles; firmly press perforations.(Courtenay you can do this to help mommy make this pizza)
Step 2 - Sprinkle Parmesan cheese, pepperoni, pepper and Italian cheese blend over each rectangle. Roll up each rectangle (starting from the short end); cut into 6 slices and place on a lightly greased baking sheet.
STEP 3 - Bake about 15 minutes or until edges are golden brown and cheese is melted. Serve with warmed pizza sauce for dipping.
We are off to the Capitals game tonight only got 5 left and they are batteling for a playoff spot... Hope that happens for the boys so their season does not end early for them... The weather is not good enough to golf yet, so Lets Play Hockey instead.

THRIFTY THURSDAY

EVENING EVERYONE
Well I had a great day today with my best friend Marilyn.. We went for lunch in Langford and had a great salad full of strawberries , chicken and avocados... Very filling.. Then we went to Fabricland so that Marilyn could get some drapes for her bedrooms upstairs...they were buy one get one free...





BEEF
ENCHILADAS


Ingredients
1 pound lean ground beef
1 small onion, chopped
1 (1.5 ounce) package dry enchilada sauce mix
10 (10 inch) flour tortillas
2 cups shredded Cheddar cheese
1 (2.25 ounce) can sliced black olives, drained

Directions
Preheat oven to 350 degrees F (175 degrees C). In a medium skillet over medium high heat, cook the ground beef and onion until beef is evenly browned and onion is tender.
Prepare the enchilada sauce according to package directions. Pour 1/4 cup of the sauce into the bottom of a 9x13 inch baking dish.
On each flour tortilla, place an equal portion of the ground beef mixture and about 1 ounce of Cheddar cheese, reserving at least 1/2 cup of cheese. Then tightly roll the tortillas and place seam side down in the baking dish.
Pour the remaining sauce over the top of the enchiladas and sprinkle with the remaining cheese and olives.
Bake in a preheated oven for 20 minutes, or until the sauce is bubbly and cheese is thoroughly melted.

THRIFTY THURSDAY

I call this "Morning Mix" it is another name for corn flakes, o's of oats, cinnamon flavored squares, and a few granola clusters all dumped into a large glass jar when the boxes are close to empty. Of course, you can use whatever dry cereals you have. Just keep a jar going all the time, in the same cupboard where you keep you boxed cereal and then add to it whenever you get close to finishing the box or bag of cereal. When the jar starts to get full, you can eat this custom mix instead of opening a new package. Also good to put on top of you yogart.

CROCKPOT WEDNESDAY

MORNING EVERYONE
A nice brisk sunny day.. I love it... The frost is still on the roofs of the houses and watching neigbours scapping their windshied.. I knew it was frosty before I even got up this morning cause I could hear Grumpy scrapping his work truck early this morning. A work day today and off to Victoria to pick up the hotrod... WooHoo...



CREAMY CROCKPOT
CHICKEN AND POTATOES




Ingredients
1 lb. uncooked chicken breast, cubed
20 oz. peeled, cubed potatoes, parboiled for 10-15 mintes.
1 can cream of chicken soup
1 pkg. Hidden Valley Ranch salad dressing mix
1/4 c. chopped onion

Directions
1. Spray inside of crock pot with Pam
(if you have no pam just take a pastry brush and brush on some olive oil )
2. Mix all ingredients in a large bowl and put into crock pot.
3. Cook on low 6-8 hours.
4. Serve with a warmed up Garlic Bread.
It is getting busier and busier for me but that is good .. I love it when the money phone rings but just wish it could be on my time... February is always busy for me cause Grumpy and I head south for a few weeks in March so I have to cram two extra weeks of work into the month..

TIPSY TUESDAY

MORNING EVERYONE
Busy day today.. I have a large order that I want to get done and delivered before we head south . If only I could be as excited as going into the dungeon as what I am for when I am sewing or blogging... Well kettle has boiled so off to make my morning tea and then to the work place I go..




CURRIED
CHICKEN
SALAD




6 boneless chicken breast halves, skin removed, cooked and diced, about 3 cups
1 cup chopped celery
1 cup of red grapes
1/2 cup diced red unpeeled apple
2 to 3 tablespoons of craisins
1/4 cup coarsely chopped pecans
1 teaspoon curry powder
1/2 teaspoon salt
1 teaspoon cider vinegar
1/2 teaspoon fresh ground black pepper
1/8 teaspoon ground cayenne pepper
1 cup mayonnaise, or to moisten to your taste
Preparation:
Combine the diced chicken with remaining ingredients in a large bowl, adding more or less mayonnaise, to moisten according to your taste. Cover and refrigerate until serving time. Serve over spinach or lettuce..
Now this recipe is good for about 6 people so if you family is smaller just do everything in half..but do not forget this would be good for lunchs tomorrow as well.

Yellow Potatoes:
Best for: Mashing, steaming, boiling, baking, roasting
Example: Yukon Gold

Red Potatoes:
Best for: steaming, boiling, roasting, au gratin, scalloped
Example: Norland, Klondike Rose

Russet Potatoes

Best for : baking, boiling
Russet are perfect to cook mashed potatoes and also are good for baking.

White Potatoes:
Best for: mashing, boiling, steaming, au gratin, roasting
Example: White rose
Great for potato salad.
Well we hope to pick up the hotrod this week.. Maybe tomorrow... lets just hope that the weather is nice or at least the roads are dry or Grumpy is going to be cleaning under the car for the whole week...
