TIPSY TUESDAY

MORNING EVERYONE
Busy day today.. I have a large order that I want to get done and delivered before we head south . If only I could be as excited as going into the dungeon as what I am for when I am sewing or blogging... Well kettle has boiled so off to make my morning tea and then to the work place I go..




CURRIED
CHICKEN
SALAD




6 boneless chicken breast halves, skin removed, cooked and diced, about 3 cups
1 cup chopped celery
1 cup of red grapes
1/2 cup diced red unpeeled apple
2 to 3 tablespoons of craisins
1/4 cup coarsely chopped pecans
1 teaspoon curry powder
1/2 teaspoon salt
1 teaspoon cider vinegar
1/2 teaspoon fresh ground black pepper
1/8 teaspoon ground cayenne pepper
1 cup mayonnaise, or to moisten to your taste
Preparation:
Combine the diced chicken with remaining ingredients in a large bowl, adding more or less mayonnaise, to moisten according to your taste. Cover and refrigerate until serving time. Serve over spinach or lettuce..
Now this recipe is good for about 6 people so if you family is smaller just do everything in half..but do not forget this would be good for lunchs tomorrow as well.

I thought I would explain to you the different kinds of potatoes ..

Yellow Potatoes:
Best for: Mashing, steaming, boiling, baking, roasting
Example: Yukon Gold

Red Potatoes:
Best for: steaming, boiling, roasting, au gratin, scalloped
Example: Norland, Klondike Rose

Russet Potatoes

Best for : baking, boiling
Russet are perfect to cook mashed potatoes and also are good for baking.

White Potatoes:
Best for: mashing, boiling, steaming, au gratin, roasting
Example: White rose
Great for potato salad.
Well we hope to pick up the hotrod this week.. Maybe tomorrow... lets just hope that the weather is nice or at least the roads are dry or Grumpy is going to be cleaning under the car for the whole week...
