CROCKPOT WEDNESDAY

MORNING EVERYONE
I see where some of you woke up to snow this morning.. Well just to let you know that we have blue skys underneath our fast moving clouds... Only in the Cowichan Valley, (land of the sun). To all of you that went to the Elton John concerts I am in envy and I am glad that you had a great time.. I never heard one person say it was not great...

SWEET AND
SOUR CHICKEN
4 tablespoons butter, melted
3/4 c. ketchup
1/2 c. white vinegar
3/4 c. brown sugar
3 tablespoons Worcestershire sauce
2 cloves garlic, minced
salt and pepper, to taste
dash red pepper flakes or ground cayenne pepper
1 1/2 c. chicken broth
6 boneless chicken breast halves, or cut in cubes
1 can (8 ounces) pineapple chunks, drained
Preparation:
Wash chicken; pat dry. Place chicken in slow cooker. Combine melted butter, ketchup, vinegar, brown sugar, Worcestershire sauce, minced garlic, salt and pepper, hot pepper, chicken broth; pour over chicken. Cover and cook on LOW for 5 to 7 hours, until chicken is tender but still moist. Add pineapple and cook for 20 minutes longer. Serves 6
Next week I am going to do some healthier recipes.. Andrea is training to do the 1/2 marathon so I thought I would help her out with the nutritional part of it... I got all my warm clothes washed and ironed , so now all I have to do is pack and I am ready for the sun and great times with great friends..
