CROCKPOT WEDNESDAY

MORNING EVERYONE
My giveaway this month is going to be quite easy to determine the winner.. so far I only have one person who is entering.. Sorry Pat I know I had said that I would keep it a secret but I just had to let everyone else know...
If there is anything I do not like it is teasing.. whether it be human teasing or weather teasing.. so the sun yesterday was so nice and then rain this morning now that is teasing and I do not like it so go away... another busy day of work...On my way home from deliveries yesterday Country Grocer had big containers of Strawberries and I have a ton of Rubarb in the freezer so I am going to make this today .. Have not had tea in the evening for the last few nights cause I thought we could have this with our tea..



STRAWBERRY &
RHUBARB
CROCKPOT
COBBLER



Ingredients -
2 ½ cups sliced rhubarb
2 teaspoons lemon juice
½ cup water
1 ½ cups sliced strawberries
¾ cup plus 3 tablespoons sugar
1 cup plus 1 tablespoon all-purpose flour
¼ cup cold butter
½ cup Half & Half or milk
¼ teaspoon salt
1 ½ teaspoons baking powder
2 tablespoons cornstarch
Preparation:
Combine the sugar, water, fruit, and lemon juice in the crockpot.
Cover and cook for 4 or 5 hours on low.
Combine the cornstarch with enough cold water to make a smooth paste, and then stir this into the fruit mixture.
Blend the flour, baking powder, and salt and cut in the butter until the mixture is grainy.
Stir in the milk until it is just moist.
Drop small amounts of this batter over the fruit mixture.
Cover and cook on high for 1 hour.

This wonderful dessert comes out great when you make it in the crockpot. The juicy rhubarb and strawberry mixture is complemented with lemon juice and sugar and the batter sets on top to make a heavenly crumbly topping which contrasts nicely with the fruity layer. Cobbler is was a very popular dessert in my home while growing up..

Had to go and turn the heater on in the garage to go to work.. so it should be nice and toasty now have a good day and talk to you tomorrow...
