MENU MONDAY

MORNING EVERYONE.
Well yesterday was a great day.. Got a bit of a sunburn .. Sat by the pool in the morning , watched a bit of the race then went and got some groceries and did a bit of shopping..I bought a cute teeshirt and Marilyn bought some great winter boots one pair was black (coach) and a pair of brown ones(Steve Madden ) they were 70%off.. Marilyn panfried some shrimp and I made a very tasty salad..for supper. Forgot to menition to you that we got in at 9:00 on Saturday. Dan & Marilyn picked us up and took us to a restaurant by our rental that they scouted earlier in the day it is called Tilted Kilt and I must say that they put the Hootier girls to shame... All dressed in little little kilts and matching plaid bras .. They had white knee highs with tartan on the top ..It was busy busy , in the month of March this city is full of spring training ball players, PGA golfers, and spectators so
need I say more.. We all had app's and I had an artichoke spinach dip and it was so good, so I thought I would post that for you today..




Hot Spinach

Dip



Ingredients

1 1/2 cups half-and-half
8 oz. grated Monterey Jack cheese
8 oz. light cream cheese
1 tsp. garlic powder
1 1/2 tsp. Worcestershire sauce
1/2 tsp. salt
Fresh ground pepper to taste
3/4 lb. fresh spinach (stemmed and chopped)
2-14 oz cans of artichoke hearts (rinsed, drained and chopped)
4 green onions, chopped
tortilla chips, pita, etc. for dipping

Directions
Bring the cream to a simmer over medium heat and add the Monterey Jack, cream cheese, garlic powder, Worcestershire, salt and fresh pepper. Continuously stir to prevent sticking until the cheeses melt.
While slowly stirring, add the spinach, artichoke hearts, and scallions. Stir until mixed and the spinach is wilted.
This dip can be served immediately or served chilled
.
Well last night we played mini golf in our back yard and I am sad to say that guys won 1 of 13 nights , we will win in the end.. We also play Mexican Train at night before bed and the girls won there ....A night of night caps and games sitting outside by the pool... We love it here just miss all my family and friends but that is okay ... Hope that our Grandson Deklan had a great skating lesson on Saturday we are sorry to have missed it but there will be alot more of us to watch.
