MORNING EVERYONE
First thing on the agenda today is to congratulate our friends son Ryan Wade on being recognized for his ice hockey accomplishments .. The Juan de Fuca Hockey Association bestowed this honour by hanging a large picture in their local arena.. Again congratulations to Ryan.
Well it has finally arrived , we are Grandparenting our two little grandboys today.. This is the first time that we have had both of them at the same time so we are so looking forward to it.. Their parents are moving into a new home and have some renos to do so this will free up some time for them to hopefully get lots of work done.. When the boys come up to Granny and Grumpys we call them adventures so we have a few things up our sleeves to do with them this weekend then all the kids are coming up for dinner on Sunday to celebrate Grumpys birthday...My cousins daughter Kelly had asked me if I had any Thai recipes and this is the only one that I have Thaid(oh sorry tried) so I thought I would post it today for her to try it out.
THAI BROCOLLI SALAD
1/4 cup creamy or chunky peanut butter
1 1/2 tablespoons of sugar
1-1/2 tablespoons hot water
1 tablespoon lime juice
1 tablespoon light soy sauce
1-1/2 teaspoons dark sesame oil
1/4 teaspoon red pepper flakes
2 tablespoons vegetable oil
3 cups fresh broccoli florets
1/2 cup chopped red bell pepper
1/4 cup sliced green onions
1 clove garlic, crushed
1 1/2 tablespoons of sugar
1-1/2 tablespoons hot water
1 tablespoon lime juice
1 tablespoon light soy sauce
1-1/2 teaspoons dark sesame oil
1/4 teaspoon red pepper flakes
2 tablespoons vegetable oil
3 cups fresh broccoli florets
1/2 cup chopped red bell pepper
1/4 cup sliced green onions
1 clove garlic, crushed
Combine peanut butter, sugar , hot water, lime juice, soy sauce, sesame oil and red pepper flakes until well blended; set aside.
Heat vegetable oil in large skillet over medium-high heat. Add broccoli, red pepper, green onions and garlic. Stir-fry 3 to 4 minutes until vegetables are tender-crisp. Remove from heat and stir in peanut butter mixture.
Serve warm or at room temperature
Well have to go and get things ready for the boys to be coming up and you guys all have a great weekend I know I will be .. Will try my best to post on the weekend but it might be in the evening and not the morning.. It is so Sunny today just hope it holds off for the weekend.. Deklan might even get a ride in the hotrod this weekend will have to wait and see...
