THRIFTY THURSDAY

MORNING EVERYONE
Well looking out the window today I see a light frost on the rooftops...but the sun is shining so that is a good thing. Had a nice evening yesterday with some friends  who spend 2 months of the year in Hawaii and they just got back all relaxed and tanned so was nice to see them and catch up..I have a new Great Niece , her name is Brook , she is the 6th grandchild for my twin brother Jim...Congrats to Wayne and Rana and give the baby a kiss from Auntie...
Since spring is here the Asparagus is starting to be on sale so I thought I would post this recipe.. We have an asparagus farm up here in the cowichan valley so will have to go and stalk up real soon..

IMPOSSIBLE
ASPARAGUS
PIE
2 cups cooked asparagus, cut up
1 cup shredded Cheddar Cheese
1/2 cup chopped onions
3/4 cup Bisquick
3 eggs
1 1/2 cups milk
1 teaspoon salt
1/4 teaspoon pepper

Combine first 4 ingredients and place in greased 10-inch pie plate. Blend remaining ingredients and pour over asparagus mixture. Bake at 400 degrees F for 35 to 40 minutes.
I just steam my asparagus for a couple of minutes in the microwave before putting in the pie plate. Another ingredient I like to add is some cooked ham.. If you cook a ham for Easter and there is any left over you can chop it up and add it to the pie... or just buy a ham steak and cut it into cubes...

THRIFTY THURSDAY
Don’t shop on payday. This is when you have the most money. You haven’t paid the bills or put money away for savings. In error, we believe that we have more money at our discretion than we really have. At the end of the shopping trip, we are a few hundred dollars in the hole and a bill goes without being paid.

Well work day today and then of to Victoria to have dinner and spend and evening with some good friends.
