MENU MONDAY

MORNING EVERYONE.
Well said goodbye to Grumpy this morning as he headed off to Charlotte for a week..I am finishing off a job this morning and then delivering down in Victoria this afternoon and going to my friend Pats place for a couple of nights. We are going to go do the Thrift Stores for a few days and just relax and do what we want... Going to check out her daughters new place in the evening for a glass of wine ... Will fill you in with all the thrift bargains that we find on our Junk Store Adventure..I am going to do this weeks Menu Monday a bit different this week cause I did not have the free time yesterday to get recipes for everyday so I am going to give you the recipe each day rather then all today....
Baked Honey
Mustard Chicken
1 onion , chopped
1/4 c butter
1/2 c honey
1/2 c Dijon mustard
salt and pepper to taste
2 teaspoons curry powder
6 boneless, skinless chicken breasts
Preparation:
Preheat oven to 375 degrees F. In small microwave-safe bowl, combine onion with butter. Cook on high power 2-3 minutes until onion is tender. Remove from microwave and add honey, mustard, salt, pepper, and curry powder; mix well.
Place chicken in single layer in shallow pan. Pour sauce over chicken. Bake, uncovered, for 32-37 minutes until chicken is thoroughly cooked. Serves 6
