MENU MONDAY


Happy New Year Everyone

Sorry I did not post the last couple of days but I decided to take the weekend off...Now I am starting a New Year giving good wishes and lots of prosperity for everyone..I am doing a giveaway this month all you have to do is make a comment and you will be entered, the more comments you make the more chances you will have to win. The month of January is going to be about cleaning and organizing with tips and suggestions..We will still have your recipes of course but just thought I would add a little of something different as well. As we were out of town for a few days I was not able to check out the Grocery ads so hope you were able to get that done on your own..Here are the recipes for this week:

Monday--Ginger Chicken with Brocolli and Carrots
Tuesday--Tortilla Pie
Wednesday--Crock Pot Chicken and Tortellini Stew
Thursday--Pork Tenderloin
Friday--Southwest Salad

Ginger Chicken with Broccoli and Carrots

Ingredients
2 teaspoons cornstarch
1 1/2 cups Swanson® Chicken Broth (regular or Organic)
2 tablespoons low-sodium soy sauce
2 teaspoons lemon juice
2 teaspoons fresh grated ginger
2 tablespoons vegetable oil
1 pound skinless, boneless chicken breast, cut into strips
4 cups broccoli flowerets
2 medium carrots, sliced
1 small onion, chopped
1/4 cup chopped fresh cilantro leaves
3 cups hot cooked regular brown rice or regular long-grain white rice

Directions
1.Mix cornstarch, broth, soy sauce, lemon juice and ginger until smooth. Set aside.
2.Heat 1 tablespoon oil in medium skillet over medium-high heat. Add chicken and stir-fry until browned and done. Remove chicken.
3.Heat remaining oil over medium heat. Add broccoli, carrots and onion and stir-fry until tender-crisp.
4.Stir cornstarch mixture and add. Cook until mixture boils and thickens, stirring constantly. Return chicken to skillet and heat through. Sprinkle with cilantro. Serve over rice, if desired.

Today I am going to take down my tree and put the Christmas decorations away for another year. I have some great ornament storage boxes that I got at London Drugs a couple of years ago and they are wonderful...Have not seen them there since but I do know that other stores have lots of storage boxes for sure. But if you want to do it the economical what here are some ideas for organizing and storing the decorations.. A lot of you probably already have your stuff all put away but for those of you who do not I think you might find this useful...If you get a sturdy box , one from the liquor store is great cause it has the dividers for the bottles in them to put the ornaments in a plastic storage container. If you are going to buy a container try and get it in either green or red cause that will let you know it is Christmas stuff and if not then take some wrap and tape it to the outside of the containers .Now inside the box you can use egg cartons to put your small breakable ornaments. Another tip is to use plastic disposable drinking glasses or the beer size ones and put your ornament inside the glass and cover with some saran wrap and and elastic band ..Make sure you use tissue paper to wrap ornaments.. Do not use newspaper cause the print might wear off onto your ornament.
